Today's Lesson: The Bridge

Warm-up

  1. Lie on the floor and bend your knees up β€” feet still on the floor.
  2. Hands by your sides, then lift your hips up as high as you can. In a bridge you've got to push your hips all the way up.

The bridge

  1. Place your hands by your ears β€” fingers kind of turned back.
  2. Push up as high as you can… then come down gently.
  3. Once you're fully up, try rocking forward and back in your bridge β€” slowly.

Going all the way back

  1. Go near a wall β€” but don't stand against it, stand a little away from it.
  2. Put your hands on the wall and arch back, walking down until you reach the floor.
  3. Once that's easy: stand up straight, arms behind your ears, legs spread out a little.
  4. Keep going back β€” you have 8 beats: 1, 2, 3, 4, 5, 6, 7… place your hands down gently (you can rock a bit)… and up for 8!

Recipe 5: Homemade Burgers

Before you start

  1. Wash your hands.
  2. Get everything out: beef mince (about a handful and a half per burger), salt and pepper, burger buns, and your favourite fillings β€” cheese, lettuce, tomato, whatever you like.

Make the patties

  1. Put the mince in a bowl with a good pinch of salt and pepper. Squish it together with your hands just enough to mix it β€” don't overwork it or the burgers go tough.
  2. Split it into balls, one per burger, then flatten each into a patty a bit wider than your bun, because they shrink when they cook. Press a little dip in the middle with your thumb so it cooks flat, not like a football.

Cook them

  1. Heat a pan or the barbecue to medium-high. A little oil on the patty, not the pan β€” same trick as a steak.
  2. Patty on, and now leave it ALONE. Don't press it and don't keep moving it. About 3 to 4 minutes each side until it's cooked all the way through β€” burgers need no pink in the middle, that's important.
  3. If you want cheese, lay a slice on top for the last minute so it melts.

Build it

  1. Toast the buns for a few seconds cut-side down in the pan while the burger has a little rest β€” a warm bun is a happy bun.
  2. Build it up: bottom bun, sauce, burger, cheese, then your salad on top so it doesn't make the bun soggy, and the lid on.

Chef's tip: press a little dip in the middle of each patty and don't squash it in the pan. Squashing pushes all the juice out, and dry burgers are sad burgers. πŸ”
