Today's Lesson: The Needle

Warm up first

  1. Warm up your legs really well โ€” star jumps or running on the spot โ€” because the needle is a big stretch. Work on a soft mat.
  2. Stand next to a wall or a sturdy chair you can hold on to for balance.

Get the shape

  1. The needle is the scorpion with a straight leg โ€” so get your scorpion first (Lesson 9), then work on straightening that lifted leg all the way up.
  2. It's a standing split: you stand on one leg and lift the other leg up straight behind you, folding your body down toward your standing leg.
  3. Hold your chair or the wall, or put your hands on the floor in front of your standing foot.

Ease into it

  1. Fold forward over your standing leg and float your back leg up behind you โ€” only as high as feels like a gentle stretch, never a sharp pain.
  2. Keep both legs straight and point your toes. Come up slowly, then do the other side โ€” always both.

Get higher over time

  1. The needle takes weeks and needs strong splits first, so keep working your splits too (that's Lesson 5!).
  2. A tiny bit higher each time is exactly right. Hold on until your balance feels safe, then try letting go for just a moment.

Recipe 2: Spaghetti Carbonara

Before you start

  1. Wash your hands.
  2. Get everything out: spaghetti, bacon, 2 eggs, a big handful of grated pecorino romano (or a mix of 1/3 parmigiano and 2/3 pecorino), and the pepper grinder.

The pasta

  1. Big pot of water on to boil with a good pinch of salt.
  2. When it's properly bubbling, spaghetti in. Set a timer for what the packet says โ€” usually about 10 minutes.

The bacon

  1. While the pasta cooks, snip the bacon into little pieces with scissors โ€” way easier than a knife.
  2. Into a big pan on medium heat until it's golden and a little bit crispy. If you like mushrooms, slice a few in with the bacon โ€” they make it even better.

The sauce

  1. Crack the 2 eggs into a bowl, add the cheese and loads of black pepper, and mix it up with a fork. That's the sauce โ€” no cream in a real carbonara, ever.
  2. Just before the pasta is done, scoop out half a mug of the cooking water and keep it โ€” you'll want it in a minute.

Put it together

  1. Drain the spaghetti and tip it into the bacon pan. Now take the pan OFF the heat.
  2. Pour in the egg mix and keep everything moving โ€” the heat of the pasta cooks the sauce until it goes silky.
  3. Too thick? Add a splash of that pasta water you saved.
  4. Into a big bowl, extra cheese on top, done.

Chef's tip: the pan comes OFF the heat before the eggs go in โ€” that's the whole secret. Eggs in a hot pan turn into scrambled eggs, and scrambled eggs are for breakfast. ๐Ÿ
